Chef Dan Doherty has hung up his chef whites at Duck & Waffle, the sky-high restaurant in the City of London that he has become synonymous with.
Chef Dan Doherty is leaving Duck & Waffle after seven years at the helm
Doherty has been the executive head chef at the restaurant, (and later chef director) at the restaurant located on the 40th floor of the Heron Tower since it opened in 2012.
Since then, it has become known not only for its signature duck and waffle dish, but the fact that it is one of the very few restaurants in London to be open 24 hours a day, giving Londoners the chance to enjoy breakfast while watching the sunrise with panoramic views over London, or equally a cocktail at sundown.
While the chef has not yet announced his next steps, he confirmed to Eater that he will be opening a solo restaurant soon.
Tom Cenci, who has been the executive head chef under Doherty, will remain in place at the restaurant.
During his time at Duck & Waffle, Doherty has helped the restaurant to open a second, more casual restaurant in St James called Duck & Waffle Local, which offers a duck-centric menu and a fast-casual concept, with the restaurant intended to be more accessible than its Heron Tower site.
Outside of the kitchen, Doherty is a familiar face on the BBC show Saturday Kitchen, and is also set to appear, from next month, in a new BBC series called Britain’s Best Home Cook. He is also the co-founder of TMRW Project with the writer Anna Sulan Masing, which organises hospitality industry talks and events.
