This is the latest “new-wave” wine bar coming to East london

A new restaurant is coming to East London’s increasingly affluent Dalston area with a weekly-changing list of 40 wines and a focus on low-intervention expressions.

Sapling ,which will open on Kingsland Road on Thursday 8th March, plans to offer a rolling list of 30-40 wines by the glass which will change week by week, although there will also be a “core list” of wines from ethically-focused, low-intervention producers “who have passion for what they create and express purity of a place with traditional vinification,” said an emailed statement.

A second list featuring 100 wines by the bottle will also be made available.

The kitchen, led by ex Bistrotheque chef Jon Beeharry, will serve “the very best local produce and utilise it to create unique, uncomplicated dishes.” It includes dishes such as smoked cod’s roe, hake, or Metjool date pudding.

“It’s really exciting to be opening Sapling in Dalston,” owner Bob Ritchie told Eater.

“I’ve lived 10 minutes away in Newington Green for almost a decade and Dalston has been such a big part of my life over that time. Sapling has been five years in the making and it’s been an amazing journey.”


“I started with weekly tutored tastings at the Berry Bros’ Pickering Cellar, which then evolved into wine schools in Beaune, multiple wine exams, nearly 2 years of searching for the right site and then leaving my previous career at the end of 2016 to make Sapling happen. It still doesn’t quite feel real! The team and I are very much looking forward to sharing the continuation of this journey with everyone in the area.”
