Former Conrad sommelier joins Grand Hyatt

Julien Peros, the former sommelier at Conrad, has recently joined Grand Hyatt in Hong Kong as its hotel sommelier, taking over from Yves Nizan who left Hyatt to join Watson’s Wine.

Peros is tasked with overseeing wine programmes at its 10 restaurants and bars including the famed Italian restaurant Grissini, named by Italian winemaker Angelo Gaja, together with the classic Grand Hyatt Steakhouse and the popular Champagne Bar to name a few.

Having joined the hotel in late March after working for nearly a year at Conrad Hotel as its hotel sommelier, the Rhone Valley native will roll out a few new wine projects to expand Hyatt’s wine offerings including a new beverage programme at Tiffin Lounge when its renovation is complete this September.

In addition, a selection of back vintages will be added to both the Steakhouse and Grissini, he revealed, adding that the Champagne Bar will see a few new additions of grower Champagnes.

Prior to Conrad, Peros worked for Hong Kong’s leading restaurant group, Maximal Concepts, and other wine merchants.
