Wineries and breweries to boost liquid yeast sector

Liquid yeast, used by many breweries and wineries, is forecast to grow globally by US$3.34 billion from 2024-2028, according to new data.

The lift in sales is, according to analysts from Technavio, is “due to its longer shelf life which can make it a cost-effective choice for large-scale production”.

Major players in the market include businesses such as: White Labs, Fermentis, and Wyeast Laboratories, however, the analysts highlighted how “collaborations and product innovations drive competition in this sector” and noted that “its advantages over dry yeast” were that “liquid yeast offers improved fermentation performance and consistency”.

The predictions also estimated that the liquid yeast sector is estimated to grow at a CAGR of 9.52% during the forecast period. However, stringent government regulations for yeast and yeast derivative products are anticipated to pose a challenge.

A notable example of collaborations between companies can be seen by AB Mauri North America’s acquisition of Omega Yeast Labs LLC last month.

The analysts observed how “this acquisition strengthens AB Mauri’s position in the US craft brewing industry and enhances its ability to develop new yeast strains”.

Added to this, in October 2023, bioMerieux and White Labs formed a collaboration that led to the creation of the Gene-Up Brewpro Yeast Slurry, an advanced PCR test for detecting contaminants in yeast — an innovation that has integrated modern diagnostic technologies into yeast production, ensuring consistent and high-quality fermentation results.

Despite the wins, the global liquid yeast sector still faces significant challenges” according to the analysts which outlined how the regulatory frameworks for yeast and yeast derivative products varied by country, which complicates the requirements for compliance with safety, quality, and labelling standards across the board.

Additionally, the sector has been under scrutiny since brewer’s yeast, derived from the beer brewing fermentation process, recently became in high demand due to being more broadly used in vegan food products.

As an increased number of manufacturers have started exploring ways to integrate the yeast into products, the global brewer’s yeast market size has also been predicted to expand further, driving up both prices and demand across the drinks industry.
