Simon Rogan collaborates with Fell Brewery for new beer range
Chef Simon Rogan’s Our Farm has teamed up with Fell Brewery in Cumbria to create a range of seasonal craft beers.
Using produce grown on the farm and ingredients foraged from areas surrounding the Lake District village of Cartmel, four beers will be released. The first release will be a woodruff stout that has been brewed using the farm’s woodruff leaves.
Rogan’s ethos is for growers and chefs to work side-by-side to create the ingredients used in all of his restaurants, such as L’Enclume based in Cartmel. As such, Our Farm is an extension of Rogan’s kitchens and a place where he has said his teams apply the same ethos, drive and attention to detail.
Speaking to the drinks business about the beer collaboration with Fell Brewery, L’Enclume executive chef Paul Burgalières said: “Firstly, because it’s a collaboration we are looking to work closely together to keep creating some exclusive beers throughout each season. So, each beer will showcase a season and product that we can work with.”
Additionally, he revealed how the collaboration stemmed from shared values and a sense of caring very much about the local area.
Burgalières told db that the “values of the brewery and of the farm are aligned” both from a sustainability perspective as well as the fact that each also work with local businesses and people, due to both having been “established in the village for many years”.
Fell Brewery founder Tim Bloomer grew up locally and recalled tales of hearing about a “mysterious chef from Southampton” who was moving to Cartmel. Rogan has since gone on to shape the area into a gastronomical hotspot and the collaboration reflects their mutual appreciation for the land.
Burgalières added: “We wanted to have a beer launch for the winter and stout is a popular winter drink. It’s the right product for this time of the year.”
Food pairings at L’Enclume for the first beer include: chocolate tart infused with chocolate malt, buttermilk ice cream, pear cream and juice; frozen Tunworth cheese, malt crumb, preserved Jostaberries and lemon and dark chocolate and whisky mousse, chocolate sponge, coffee, tonka.
The beers will be available through Home by Simon Rogan and Simon Rogan’s Lake District restaurants, and can also be bought in Fell bars or via the brewery’s e-retail site.
Beers will retail at £5.50 per 440ml can; four cans for £15 or 12 for £44.
