Top bins! Soccer AM star brews Medieval beer

Former Soccer AM presenter and current YouTube sensation Robbie Knox has collaborated with The Wild Beer Co. on a new beer which draws on a rather old fashioned brewing technique.

So far only a glimpse has been offered into the unconventional brewing process, which involves hot stones being lowered into an open barrel (or tub) of mash. However, Bin Day Brewing, Knox’s company, teased that it would be a “world first”, or at least the first for a couple of centuries. Somerset-based Wild Beer Co. have collaborated with other breweries before, notably for this year’s Six Nations, but this historically-themed beer is something a little different.


Though beer was produced in the Middle Ages as a means of sanitising water and stretching grain reserves, we live in more hygienic/bountiful times now. The technique of using hot stones was common in medieval central and northern Europe as a means of caramelising the malt. The resultant Steinbier will have a sweetness and delicate notes of soot. The technique disappeared in Austria around the time of the First World War, but it was resurrected at the Sailerbräu Franz Sailer microbrewery in Germany decades later.

Knox registered Bin Day Brewing as a company in March 2021 after successfully executing a replica batch of BrewDog’s Elvis Juice, which he dubbed “Bin Day IPA” after his expertise in refuse disposal. Previous collaborations include working with Docks Beer on the orange-flavoured 5.2% ABV Valencian Tip Run and Shuffleboard lager, produced with Norwegian brewer Lervig.

Outside of pioneering bin-themed beer making, Knox has become a semi-ironic social media influencer with over 100 thousand subscribers on YouTube. His hits include £55 Mega Sainsbury’s Haul and the classic Mediocre Shed Tour.
