Shingo Gokan will open a wine cocktail bar in Tokyo
World-renowned Japanese mixologist Shingo Gokan is set to open a wine cocktail bar and restaurant named Swirl in Shibuya, in Tokyo this autumn.
Shingo Gokan, the mastermind behind internationally known cocktail bars Speak Low in Shanghai and The SG Club in Tokyo, will unveil his fourth venue in Tokyo this October.
The bar will be themed around the unique concept of ‘wine cocktails’. Gokan has revealed that he does not plan to use any mixology equipment, such as spoons or shakers. Instead, all drinks will be prepared by swirling in decanters.
Motohiro Ogoshi will be the acclaimed sommelier of the venue, on hand to select bottles of wine that complete the drinks selection.
Latin American cuisine will be served to complement the drinks. The kitchen will be helmed by Fumio Yonezawa, head chef of The Burn in Tokyo and also the first Japanese sous chef to man the kitchen at the three-star Michelin Jean-Georges in New York.
