Perrier-Jouët teams up with L’Atelier de Joël Robuchon and Lalique
Perrier-Jouët is to launch a new menu experience in Hong Kong with three Michelin-starred restaurant L’Atelier de Joël Robuchon and French luxury crystal maker Lalique.
The new menu showcases how gastronomy, art and Champagne can blend together.
Chef Adriano Cattaneo from Rubuchon will be meticulously pairing Perrier-Jouët cuvees along the evolving courses of the special menu that was inspired by nature and Lalique crystal pieces.
The culinary experience will be commencing with the distinctive L’Œuf de Poule, an elegantly curated dish with king crab and paired with the beloved Perrier-Jouët Blanc de Blancs. The versatile yet delicate appetiser is merged with the vibrant flavours of the Chardonnay grapes, bringing out the crisp and lively acidity of the Blanc de Blancs.
Next in line is L’Oursin, paired with the delicate Perrier-Jouët Belle Epoque 2012, and then “La Langoustine”, a combination of black truffle and foie gras sauce in the scampi raviolis.
Continuing the journey, next course is Le Black Cod, served in Malabar black pepper sauce. Progressing to the main course La Caille or Le Bæuf – a caramelised foie gras with free-range quail, served with mashed potato.
Choice of your own, another remarkable main course on the menu is pan seared Kagoshima Wagyu beef with mashed potato.
The menu is concluded by the Le Champagne, a “Perrier-Jouët” mousse with strawberry compotes and rose champagne emulsion, a deliciously decorated dessert in exuberant rose colours. The light and refreshing flavours complemented with the Belle Epoque’s gentle fruity notes and sweet almond finish. to be paired with Perrier-Jouët Belle Epoque Rosé 2012.
As part of the theme The Art of Revealing Nature, unique Lalique pieces have been selected to showcase in the restaurant, including the Anémone collection, featuring the emblematic flower of Perrier-Jouet in vases, bowl, decanter, votive and sculptures.
The experience will be available at L’Atelier de Joël Robuchon from the 15 of March until the 31st of May 2021. The 8-course menu will be available at HK$2,280 (+10% service charge) and an additional $880 for Perrier-Jouët Champagne Pairing.
In the meanwhile, the Champagne house also announces the new Perrier-Jouët Belle Epoque 2013 vintage in Hong Kong.
The 2013 vintage was a year in which the usual pattern of the seasons was delayed, with a cold winter and a cool, wet spring resulting in the vines flowering more than two weeks later than average, in the first days of July.
Fortunately, the eventual outcome proved well worth the wait: after a dry, sunny summer, autumn brought favourable conditions up until harvest, which began on 30 September, yielding clear wines with a good balance of alcohol and acidity.
They produced a vintage of great finesse and character, with significant potential for ageing. Now, after more than six years in the cellars, Perrier-Jouët Belle Epoque 2013 is finally being released.
In the blend, Pinot Noir grapes (45%) from the Montagne de Reims being used to support and enhance the delicate structure of Chardonnay (50%) from the celebrated Grand Cru villages of Cramant and Avize.
A small quantity of Meunier grapes (5%) from Dizy perfects the balance between the two, resulting the House’s intricate floral style.
As the house’s tasting note says, “pale gold in colour, with subtle glints of apple green, Perrier-Jouët Belle Epoque 2013 gives full expression to the aromas of white fruit and flowers characteristic of this alluring, harmonious champagne.”
