Pol Roger appoints chef ambassador
Champagne house Pol Roger has appointed Michael Wignall, chef patron of the Michelin-starred The Angel Inn at Hetton in North Yorkshire, as its chef ambassador.
Michael Wignall is Pol Roger’s new ‘chef ambassador’
To mark the partnership, which began on 1 November, Pol Roger Brut Reserve will become the house Champagne pour at the restaurant, which is housed in a 15th century inn and is widely regarded as the UK’s original gastropub.
Throughout the year Wignall will create seasonal dishes to pair with particular cuvées within the Pol Roger range.
The Angel Inn won its first Michelin star last October, less than a year after Wignall took the helm and introduced his flavour-driven, informal fine dining approach at the venue.
Located in the North Yorkshire Dales, Wignall takes a seasonal approach to cooking and works with local ingredients sourced and foraged from the Dales.
“We are thrilled to be working with such an acclaimed chef and feel very excited about Michael’s deft understanding of flavour and how he will use this to pair the different Champagnes with inventive and previously undiscovered pairings,” James Simpson MW, managing director of Pol Roger Portfolio, said of the partnership.
Wignall added: “I am delighted to be working with Pol Roger and to introduce them as our house pour at The Angel. It is so important for us to work with a house who have the same passions, values and ethos as us.”
