French fine dining restaurant Gauthier to go vegan

French fine dining restaurant Gauthier Soho is aiming to transition its menu to be completely vegan within two years, having already scrapped foie gras from its menu and launching a vegan tasting menu.

Alexis Gauthier, the owner of Gauthier Soho, went vegan in 2015.

The restaurant, owned by chef Alexis Gauthier, used to serve its customers 20kg of foie gras every week.

That was brought to an end in October 2015 after protest period by animal rights activists, which led to Gauthier not only removing foie gras from his menu, but going vegan himself. A the same time, it transitioned its previously vegetarian tasting menu to vegan, calling it Les Plantes.

“One of the things that upsets us is the idea that people can feel they are ‘being a pain’ or ‘making a fuss’ when visiting restaurants and asking for vegan menu,” the restaurant states on its website.

“This is precisely the opposite of our intention. From the very first day we opened we have strived to make all of our guests feel as welcome as each other, with all menus available at all times. Our Les Plantes vegan menu is presented alongside our classic menu and is permanently available.”

While its current menu is 75% plant-based, it does still feature cod, pork and duck, however according to reports by Big Hospitality, Alexis now plans to transition its entire menu to vegan within the next two years.

Most recently, the chef made waves with his 100% vegan foie gras, made in collaboration with plant-based chefs BOSH!.

A unique recipe of lentils, walnuts, shallots and mushrooms give the dish its meaty texture, which are blended together in a food processor to produce the “pate” mixture that is then topped with vegan butter.

Speaking to at the Restaurant Congress event in London, Gauthier said his kitchen would not be creating any new dishes involving meat, fish, eggs or butter, adding that he hoped his menu would be 100% vegan “within 18 months to two years”, according to Big Hospitality. 

Gautheir’s vegan foie gras is made from a combination of lentils, walnuts, shallots and mushrooms and topped with vegan butter.
