Troplong-Mondot to close Michelin-starred restaurant
Château Troplong-Mondot has announced it is to close its Michelin-starred restaurant, Les Belles Perdrix, for two years for refurbishment.
Opened in 2012, the restaurant was awarded a Michelin star last year. It will close for its two-year hiatus on 17 December and reopen in 2021.
With the Saint-Emilion estate having changed hands this year from the Valette family to the French insurance firm SCOR Group, the restaurant’s renovation would seem to be part of a new wave of investment in the property by its new owners.
New CEO Aymeric de Gironde – who joined Troplong from Cos d’Estournel where he was general manager this August) said: “We are modernising our vinification tool which implies a major undertaking on the property.
“Therefore, it seemed to us that the conditions will not be met to fully enjoy the enchanting setting of Les Belles Perdrix as well as our chef’s cuisine”.
Head chef David Charrier said he planned to travel in the interim to build up ideas.
He said: “This break is an ideal way for me to go even further in my cuisine. I will be able to travel and to open myself to ever more advanced techniques and new influences.”
The four guest rooms at the property will remain open as normal.
