The Gibson launches seasonal cocktail list

Classic cocktail bar The Gibson in Old Street has launched an outlandish new menu of seasonal cocktails inspired by the 12 months of the year.

Devised by owner Marian Beke, formerly of The Nightjar, the 48-strong list features quirky ingredients like lion’s mane mushrooms and marshmallow tea.

Also weaving their way into the drinks are parma violet jelly, tamarillo chutney, popping candy, Indian lilac leaf, iceberg lettuce juice, acorn polenta, seaweed pesto and pine pollen dust.

Running alongside the new menu are a selection of snacks made with locally-sourced ingredients. To coincide with the launch, the bar will be holding monthly masterclasses hosted by Beke, which will include ingredients tastings and two cocktails.

The Gibson opened last year and has already risen to fame, taking the number six spot in the World’s 50 Best Bar Awards.

Above the Clouds (October)

Mount Gay rum, marshmallow tea, aronia juice, kea plum jam, lime, aged balsamic, holy mavi syrup, golden preserve, pigment d’espelette.

Loch, Stock & Barrel (December) 

Chivas Regal, fresh lemon, tobacco leaf smoked honey, ginger wine with Scottish thistle & heather, bamboo charcoal, salty cacao butter ice.

Scandal in Bohemia (October)

Sweet grass steeped Woodford Rye, absinthe, hemp cannabis, poppy opium oil, preserved oriental lemon brine, French confetti candy syrup, forbidden jelly ice, smoking wood mushroom.

Tea Time with Alice (June)

Rhubarb gin, raspberry & blackcurrant curd, ice cream tea soda, milk oolong & hibiscus, fresh lemon.

Beyond the Pines (February) 

Monkey Shoulder & spruce resin infusion, Kamm & Sons, lemon, pine-apple and elderflower juice, smoked juniper & rosemary honey, gooseberry chutney, ginger beer, wasabi, matcha.

Blue Mountain Mai Tai (June)

Havana 7 Year Old, Bourbon, fresh lime and orange, orris & nougat cream, roasted apricot kernel amaretto, Himalayan salt, Australian mountain pepper, fudge Sherry cordial.

Cinema Paradiso (April)

Plymouth gin, chocolate muffin, brewed espresso, limoncello, Campari, chai tea vermouth, tonic water.

Remember the Mane (October) 

Sloeberry-washed IPA, Glenfiddich, Jaegermeister, Amer Picon, 5 Year OId Puer tea, guarana coffee, lion’s mane mushroom dust, smoking meadowsweet, pork scratching.

Grand Orient Express (October) 

Smoke-dried Longan, Naked Grouse, roasted malt barley tea, carob syrup, fresh galangal, lemon, custard apple, spicy Korean bulgogi marinade.
