HK’s Spoon to reopen as Rech by Alain Ducasse
Spoon by Alain Ducasse at Hong Kong’s InterContinental Hotel will have its last night of service in January before reopening mid-February as Ducasse’s seafood restaurant, Rech.
Rech was created in Paris in 1925 by Adrien Rech from Alsace and began life as a humble grocery before turning itself into a popular oyster and seafood bistro. Rech was then taken over by Alain Ducasse in 2007 who championed the pan-seared line-caught sole with new potatoes as Rech’s signature dish.
Opened in 2003, his one Michelin starred Spoon by Alain Ducasse is somewhat of a Hong Kong institution and will have its last night of service on 1 January, 2017 before renovations start. The Rech opening is planned for mid-February.
It will be Ducasse’s first Rech outpost outside France and will retain the chef, Stéphane Gortina who has worked with Alain Ducasse for over 11 years.
Marie Deroudilhe, who revamped the Parisian restaurant in 2012, will be in charge of the design of the Hong Kong restaurant.
Hong Kong’s general manager, Claus Pedersen said: “We are delighted to continue our long-term partnership with Alain Ducasse Entreprise and to bring the first Rech restaurant outside of Paris to InterContinental Hong Kong.”
