Benallal and Orrico team up for ‘Black & White’ dinner
Akrame Benallal of Akrame and Philippe Orrico of Upper Modern Bistro, ON Dining and Picnic on Forbes will host a two-night dinner focused on the two colours, black and white.
Black is Akrame Benallal’s favourite colour while Philippe Orrico has an “affinity” for white. Black is the signature colour sprinkled on all of Benallal’s dishes in his Michelin-starred restaurants, Akrame in Paris and Hong Kong – from pineapple, apple or pear coated in black caramel to dishes accented with black truffle. Orrico on the other hand, champions white which he feels “is rarely ever the star of the plate.”
The director chef of Michelin-starred On Dining as well as Upper Modern Bistro and Picnic on Forbes prefers plain white, minimalist interiors and his signature dish, the oft-emulated “63-degree egg” is indeed, very white. The two chefs have joined forces to create a black and white themed dinner, firstly hosted on Wednesday, 21 September at Upper Modern Bistro and then at Akrame the next day.
Dishes include Orrico’s white risotto, yellow tomato water, langoustines and Sancho pepper paired with Josmeyer Le Kottabe Riesling 2014 in magnum to Benallal’s beloved black snapper with beetroots, and rhubarb paired with Gerard Fiou Sancerre 2014.
