Bali’s Potato Head opens in HK
A spicy slice of Indonesia has come to Hong Kong in the form of Potato Head, a sister venue to Bali’s upscale beach club and restaurant.
Sun worshippers across Asia will know of Potato Head in Bali, a lavish beach club offering unrivalled views of the Indian Ocean with three restaurants, two bars and infinity pool and now Indonesia’s hospitality group, PTT Family has Hong Kong in its sights for the next venue.
Despite sadly not being near any beaches, Potato Head in Hong Kong is a vast 8,000 square foot space in Sai Ying Pun which houses Kaum, the first international outpost of an Indonesian restaurant serving up traditional recipes hailing from Sumatra, Java, Kalimantan, Sulawesi and Bali.
An Indo take on a Bloody Mary
Kaum takes its inspiration from indigenous cooking methods, such as rendang (caramelisation over a low heat) sate (skewer grilling) and guling (pit roasting) and the kitchen has been fancily kitted out with three grills for bamboo grilling on lava stones, skewer grilling and pit roasting for Indonesia’s answer to suckling pig, babi gulung.
The hearty cocktails are masterminded by Dre Masso, PTT Family’s director of mixology and follows the ‘root to flower’ philosophy, using Indonesia’s native spices and fruit. Highlights include the Pedas Margarita, made with Cimarron Tequila, mescal, honey chilli syrup, pineapple and lime juice and the Toraja with Hennessy Cognac, Nusa Caña rum, citrus juice, natural yoghurt, egg white, palm sugar and soda.
PTT Family also has other Potato Head brands in Singapore and Jakarta and opened its first hotel, Katamama in Bali earlier this year.
