Sake & Terroir with dbHK
Discover the fascinating world of sake with the drinks business HK and Jebsen Fine Wines in a special educational event featuring premium sake at the China Club on 21 June.
Premium sake has gained much momentum in international markets as a high quality beverage with thousand years of history and a well-defined classification system, yet its complexity and diversity is still relatively under explored by sake enthusiasts. Different rice polishing rates (seimaibuai), production regions, rice species, water type, and production techniques can all exert great influence on this seemingly simple drink made from water, koji and rice.
The drinks business HK’s masterclass will feature a comparative sake tasting including some of the finest bottles that will illustrate all the above mentioned factors in influencing the quality and style of sake.
It will be led by Mr. Kazuki Usui, CEO of Senkin Shuzo and Mr. Ken Chan, Sake Ambassador of Jebsen Fine Wines.
Senkin Shuzo (Domaine Senkin) is the oldest ‘kura’ (brewery) in Tochigi prefecture. Mr Kazuki Usui, a former wine sommelier, has revolutionised and modernised the production and sake style at Senkin, by applying his wine knowledge and reinforcing the ‘terroir’ concept.
Senkin bottles do not show the ‘tokutei meishoushu’ but highlight the harvest year of the rice as ‘vintage’, and the rice type. In a continuous drive to push the boundary, despite having produced a 19% seimaibuai and barrel-fermented sake, Senkin has recently produced a single barrel with just 7% seimaibuai. The pairing dinner that follows the masterclass will be the first time this extraordinary sake will be tasted in Hong Kong and Jebsen Fine Wines has been allocated 50% of this very special barrel.
