HK’s Serge et La Phoque launches à la carte menu
Contemporary French restaurant, Serge et La Phoque (Serge and the seal), will introduce the à la carte sharing menu in mid-September to mark its transition towards “a more relaxed way of dining.”
Hidden behind the noisy, vibrant stalls of Wan Chai’s wet market, Serge et La Phoque opened over two years ago and introduced on its original tasting menu upscale dishes such as the frozen coconut ceviche and pigeon in pigeon liver reduction to Hong Kong’s dining scene.
Owners Charles Pelletier, Frédéric Peneau and Christophe Pelé said to db HK, “The initial goal of the restaurant was always to have an à la carte menu, but to ensure consistency within the kitchen we felt it was important to start with a degustation menu so that the kitchen team could feel comfortable cooking the dishes we create, mastering the flavour and technique for each one. Now we’ve amassed a collection of signature dishes that represent the spirit of Serge et le phoque and we’re ready to introduce them in the new menu layout.”
The à la carte menu consists into four sections, vegetables, crustacean & shellfish, fish and meat alongside a separate aperitif and dessert menu and natural wine list.
Ingredients are sourced from around the world, including fresh seasonal fish from Hong Kong, and meat from premium vendors from Europe. A particular highlight is the 1kg côte de boeuf from 45-day aged Spanish cattle.
