Fera and Dom Pérignon join luxury forces
Dom Pérignon is marking the second “plenitude” release of its 1998 vintage with a special £405 per head tasting menu tie-in at London’s latest fine dining hotspot, Fera at Claridge’s.
Dom Pérignon’s Richard Geoffroy with Simon Rogan, head chef at Fera
Chef de cave Richard Geoffroy worked with Fera’s head chef Simon Rogan to create a 10-course menu designed to complement the character of P2-1998, the rebranded name for Dom Pérignon’s expanding Oenothèque project.
Released after 16 years ageing on lees, the P2-1998 represents what Dom Pérignon’s chef de cave Richard Geoffroy believes is the second of three “plenitudes”, or optimal expressions, shown by the vintage during its maturation process.
Commenting on this collaboration with Rogan, who is known for his use of seasonal English ingredients, Geoffroy said: “I felt like we were two peas in a pod! Simon aspires to the same things in his cooking as I do in my winemaking. It’s a very natural partnership.”
The menu’s price includes one bottle of Dom Pérignon between two people, but not the service charge.
