According to French newspaper Le Figaro, the 50-seater restaurant will open across from arts centre L’Institut Culturel Bernard Magrez early next year.
Helping to put Bordeaux on the culinary map, the restaurant will specialise in regional Bordelais cuisine, taking in lamb, seafood, oysters, foie gras and entrecôte.
In a nod to the region’s fine wine heritage, Robuchon even plans to cook with vine cuttings.
“I recently tasted a paella cooked in this way and it was delicious,” he told Le Figaro.
The restaurant will double as a boutique hotel with seven guest rooms.
Robuchon, who was once the holder of 26 Michelin stars, has a dozen restaurants in Paris, London, Hong Kong, Las Vegas, Moncao, Macau, Taipei and Tokyo.
Magrez meanwhile, owns 40 wine estates across four continents, including Château Pape Clement, La Tour Carnet and Clos Haut-Peyraguey in Bordeaux.
