Mumm inspires young chefs
GH Mumm has unveiled the results of a partnership with the Academy of Culinary Arts, whose Annual Awards of Excellence the house has sponsored for over 10 years.
In an initiative designed to support the UK’s top young chefs, recent ACA winners were invited to visit Maison GH Mumm in Reims, where each chef worked with Mumm ambassador Neil Phillips to create a dish that complemented a Champagne from its range.
The initiative featured a number of the UK’s top chefs, including Mark Stinchcombe of 2 Michelin star restaurant Le Champignon Sauvage, Richard Phillips of 2 Michelin star restaurant Le Manoir aux Quat’Saisons and James Mitchell from The Capital.
Stinchcombe paired the Cordon Rouge NV with a starter of scallops, escabeche carrots, tomato and cumin vinaigrette; Mitchell paired the rich Cuvée R. Lalou 1999 with fillet of veal, fricassee of mushrooms, asparagus, foie gras, truffle potato foam and a Madeira jus; while Phillips matches the sweetness of GH Mumm demi-sec with a pudding of passion fruit and banana macaroons.
GH Mumm now plans to make these pairings available to chefs and sommeliers across the UK as part of the close association it has cultivated with gastronomy. Each recipe is available to download at www.champagneassembly.co.uk.
