Hibiscus chef goes gastro

Claude Bosi, chef patron at two-Michelin star London restaurant Hibiscus, is set to open a gastropub in Wimbledon.

Due to open on 1 February, Fox & Grapes is a collaboration between Lyon-born Bosi, his brother, Cedric and Hibiscus sous chef, Patrick Leano.

In contrast to the strong French influence evident at Hibiscus, the south London eatery will have a British theme and will be “dedicated to cooking the very best of what’s in season”.

Along with traditional English food, the pub will offer a large range of wines and draught beers, “many of which”, it claims, “are brewed right here in the capital”.

With three bedrooms, the venue also doubles up as a micro-hotel “if you don’t fancy the drive back into town.”

Having worked at Alain Passard’s L’Arpège and Alain Ducasse in Paris, Bosi moved to England in 1997 and in 2000 set up Hibiscus in the Shropshire market town of Ludlow. Bosi relocated his restaurant to London’s Mayfair in 2008 after Hibiscus gained two Michelin stars.
