Jaboulet focus for new Galvin venture
The wines of celebrated Rhône producer Paul Jaboulet Ainé are to receive a special showcase in the latest Galvin restaurant destined for London’s Spital Square.
Due to open in mid-November, the appropriately named Galvin La Chapelle will feature an extensive selection of Jaboulet wines, including a number of rare wines and vintages of Hermitage La Chapelle.
In addition to a regular list offer of between four and six vintages of Hermitage La Chapelle, Galvin’s new head sommelier Andrea Briccarello promises Jaboulet fans the chance to enjoy vertical tastings going back as far as 1952, including the legendary 1961 vintage. Briccarello also hopes to be able to offer the rare La Chapelle white, revived by Jaboulet in 2006 after a 45 year hiatus.
“Our purpose will be to show what the house has been through, the improvements and what Paul Jaboulet is really all about”, explains Briccarello.
Together with the restaurant group’s chef-proprietor Chris Galvin, Briccarello travelled to the Rhone for an extensive tasting of these wines and firmly believes “there is an obvious connection with our cuisine.
The wines from the Côte de Rhône are more rustic and gamey which suits the rich dishes of the Bistro and especially Galvin La Chapelle.”
The Jaboulet wines to be stocked by Galvin all come complete with traceable chips. Customers can enter the number from this chip into the producer’s website to find out the history of their particular bottle.
